Abstract

Salted crabs are a popular local delicacy in Thailand. As a result, the production of salted crabs has become an important SME industry in the country’s freshwater fisheries. However, the current production and grading processes still rely primarily on manual labor, resulting in significant loss of human resources and time. This research study explores the use of computer image processing techniques, specifically color and size properties, to classify salted crabs. The results show that computer image processing techniques can be effectively used for salted crab classification, and can be further extended to develop hardware systems for future use in the industry.
