Abstract

This study aims to study the nutritional
properties of Khao Hang produced from the Phuphan Hom Glutinous Rice and RD. 24
to develop nutritional rice products with spatial identity It has sensory
properties after cooking suitable for consumers. and has recognized nutritional
properties by working with the Ban Nang Noi-Phon Pla Loo community enterprise
group Which has more than 10 years of production experience in the field of
germinated brown rice and hanging rice, has 36 members and has a network that
produces Hom Mali 105 rice, Phu Phan fragrant rice and RD43 rice more than 5
groups, enabling continuous rice production. and distribution of income to more
than 100 rice farmers. Germinated brown rice and Hang rice are classified as
Rice in Niche Market because it is a product of a unique production process. Or
it is rice that is grown only in a specific area. Currently, there is only one
type of hanging rice that has been certified. Geographical Indication (GI) rice
is Hang Hom Thong Sakon Dawapi rice. Planted in Waritchaphum District, Phang
Khon District and Akat Amnuay District Sakon Nakhon Province. However, consumer
attention has led to the expansion of the high nutrition rice market
accordingly. Development of new products based on the processing experience of
community enterprises and the availability of farmers who produce raw materials
in the area Can't meet the needs of buyers in big cities that pay attention to
nutritional information, packaging story or the origin of the product that
creates the value of the product, including sensory properties or softness
after cooking which requires multidisciplinary work The team consists of
professors specializing in starch and amylose. Lecturers with experience in
community product development and local researchers Experienced working with
community enterprises for a long time. The expected outcomes of this project
are therefore not the only academic achievements. But it is an academic work
that able to support further education of the potential of the visually
impaired From research and development of KMUTT researchers and applications to
support community enterprise groups in the target area for academic service of
KMUTT in the future.
