Abstract

Ratchaburi province, located in the western region of Thailand, is the center of agricultural products and agricultural processing industry. Since most of occupations in this area involves with cultivation such as coconuts, pineapples, turnips, etc. However, cultivators in Ratchaburi still have lacked of food safety and food processing from using appropriate chemicals and removing undesirable bacteria for their products. Therefore, enhancing knowledge on avoiding/reducing the use of preservatives for agricultural products by using the turnip-grower group as a sample model. Entrepreneur will manage knowledge and expand outcomes from the workshop for increasing their production quality. Cultivators should be able to use precision tools or technology to improve their quality of the products as follows the standard of nutritious and food safety, and to control tasty recipes of the products for consumers as well as to promote community enterprise. Processing of agricultural products in the area will create a job, income, and economic development in Ratchaburi community. Therefore, encouraging innovate for radish processing must be supported successively to increase the quality of the production, reduce costs and labor shortage in the area.
