Abstract

The effect of fermentation supernatant (FS) containing acetic: propionic: butyric acid on the growth of the human colon cancer cell line (SW620) was investigated. The FS was produced by fermenting native, cross-linked, and retrograded debranched canna starches with pig cecum content for 7 d. The proportion of butyric acid was quite high in native and cross-linked starches (48:14:39 and 55:13:32, respectively). Fermentation of retrograded debranched starch generated a relatively high portion of propionic acid (22 %). The FS derived from native and cross-linked starches showed a stronger inhibitory effect on the SW620 cell line than that from retrograded debranched starch, due to their higher butyric acid contents. After 24 h, FS obtained from retrograded debranched starch showed a stronger effect on SW620 cell inhibition than on the monkey kidney normal cell line (Vero cell).
