บทคัดย่อ

Antimicrobial activity of chitosan coating on asparagus spears against two foodborne pathogens was investigated. Fresh asparagus spears were coated with 0.5% chitosan solution and then inoculated with each Escherichia coli or Salmonella sp. suspension (105 CFU mL-1). The sample was compared on chitosan activity with an inoculated Escherichia coli or Salmonella sp. sample, which was compared to fresh asparagus spears that were dipped in sterile distilled water (control). Asparagus spears were packed in foam tray and wrapped with 14 ตm thickness PVC films. Then, the trays were stored at 10ฐC, 85% relative humidity for 9 days. Escherichia coli, Salmonella sp., total microbial, yeast and molds counts of asparagus spears were enumerated. Fresh asparagus spears dipped in sterile distilled water had an initial Escherichia coli count of 1.3 log CFU g-1 which was below the detection level, whereas Salmonella sp. count was about 3.1 log CFU g-1. Chitosan solution slightly reduced Escherichia coli count of asparagus spears inoculated with Escherichia coli about 0.6 log CFU g-1, whereas its reduced Salmonella sp. counts of asparagus spears inoculated with Salmonella sp. about 0.2 log CFU g-1. After storage at 10ฐC, chitosan solution reduced Escherichia coli count to about 0.4 log CFU g-1, whereas it reduced Salmonella sp. counts to about 1.5 log CFU g-1. Total microbial count of asparagus spears coated with chitosan solution and inoculated with Escherichia coli or Salmonella sp. was lower than that of control sample.
