Abstract

The neutral sugar composition in water-, EDTA-, and Na2CO3-soluble pectin fractions in the pulp of 'Kaek Dum' and 'Red Maradol' cultivars of papaya (Carica papaya) treated with 100 μl L-1 of 1-methylcyclopropene (1-MCP) and then ripened at 25±2°C was determined. Results revealed that the predominant neutral sugars in the water-, EDTA- and Na2CO3-soluble pectin fractions were galactose (Gal), followed by arabinose (Ara), and rhamnose (Rha) in both control and 1-MCP treated fruit. The changes in neutral sugar composition of cell wall in each fraction showed differences on day 4 for both papaya cultivars, especially the changes in water soluble pectin fraction. The presence neutral sugars in each fraction of 1-MCP treated fruit of both papaya cultivars was within group of control fruit but changes of neutral sugars in 1-MCP treated fruit was lower compared to control fruit.
