Abstract

As one of Thailand's favourite ready-to-eat fruits, jackfruit has export potential and is expected to be one of the top five fruits exported to China in 2020. The new jackfruit cultivar, 'Thongploy Praneet,' has large fruits and is available now. Because the jackfruit contains so little rubber, it is bred specifically for its ready-to-eat fruit. The flesh is dry and golden in colour, with a crisp, sweet taste and aroma with samll seeds. But there is a shortage of data on how to care for jackfruit once it has been harvested. Delaying and controlling postharvest ripening is a major problem. In order to control the ripening time of 'Thongploy Praneet' jackfruit, this proposal will include post-harvest management experiments. Jackfruit will be fumigated with 1-MCP (1- Methylcyclopropene), a volatile chemical used as an ethylene response inhibitor, before being stored at both room temperature (25C) and low (13C). Jackfruit is stored in an environment that allows it to continue ripening for the necessary time period. Furthermore, jackfruit that has been fumigated with 1-MCP and stored at a cool temperature will be monitored for optimal ripeness through the use of the ethylene-releasing chemical ethephon. This study is part of an ongoing effort to determine the best way to process newly harvested jackfruit. For a total of 633,200 baht, it will run for a full year. The outcomes of the research will contribute to the understanding of physiological changes. It could help business owners and exporters save money by reducing fruit spoilage after harvesting. The results of the study will be published in a single peer-reviewed international publication that is included in the ISI/Scopus databases.
