Abstract
This research was studied the effects of acidified sodium chlorite (ASC) in washing process to control microbial and maintain quality of microgreen. Pea microgreen was used in this research. Pea microgreen were dipped in distilled water (control) to compare with 100 ppm ASC dipping for 1 min. After treatment, microgreen were rewashed by distilled water and centrifuged for removing the excessive water then packed into plastic tray sealed with PP film and held at 10°C for 8 days. Inhibition of microbial growth including total bacteria, coliform, yeast was found in pea microgreen treated with 100 ppm ASC.This treatment also induced antioxidant capacity, total phenolic and maintained chlorophyll content when compared with the control (non-treated pea microgreen) during storage for 8 days.
