Abstract
Canistel pulp is rich in carotenoids,serves as a
natural colorant with health benefits in food products. This study
aimed to determine the potential of canistel pulp extract in bread.
Green ultrasound-assisted extraction (UAE) was used for
extracting carotenoids from dried canistel pulp using ethanol:
water ratio (88:12) at 40 kHz, 300 W for 30 min. The dried
canistel pulp extract (CPE) was added to bread at 0, 5, and 10%
concentrations as a natural colorant. Results showed that 10%
CPE resulted in the highest yellow color and total color
difference (ΔE) value compared to control. Increasing the CPE
content, the redness (a*), yellowness (b*), and color intensity or
chroma were increased (p≤0.05). The bread with 10% CPE also
showed the highest total phenolic content (TPC) (5.71 mg
GAE/g sample), total flavonoid content (TFC) (1.29 mg QE/g
sample), and β-carotene (30.97 mg/100 g FW). The results
indicated that dried canistel pulp extract could be used as both a
colorant and a functional ingredient in food products.
