Abstract
The application of emulated plasma activated solution (EPAS-H2O2) combined with nanoemulsion coating to extend the shelf life of fresh-cut Nam Dok Mai mangoes for export was study. Nam Dok Mai mangoes were washed with EPAW and coated with nanoemulsion including 1% whey protein and 0.05% hexanal, resulting in reduced weight loss. The value was of 0.25%. In addition, it was found that the EPAW and nanoemulsion coated on mangoes could reduce the browning compared with untreated mango (control). The result showed that treatments with EPAS-H2O2 combined with nanoemulsion coating had no effect on quality of including total soluble solid, titaable acidity, firmness, and sensory evaluation of fresh-cut mango. Moreover, these treatments could inhibit the growth of total bacterial, E. coli, Salmonella sp. Pseudomonas sp. and plant pathogenic fungi (C. gloeosporioides and L. theobromae).
